Actually this mind boggling quote of the brilliant Albert Einstein is very hard to fathom, even his fellow scientists and many deep thinkers don't actually have very good explanations about this. So do I, but I'll explain my thoughts and views as much as I can.
In this famous quote, Albert Einstein is contemplating why mathematics that are mere products of our critical thinking skills, can describe and explain actual or real objects in the physical world. For me, this is actually true, we can notice numbers in our everyday life, time, measurements, calculations and everything.
Humans can explain almost everything using numbers, and all things in the universe is mathematical in nature, but humans don't know exactly the reason why numbers is very applicable to real objects when it is just something created by their thoughts. I reckon, perhaps this is also the main reason why Einstein quoted such idea, because he himself could not fully comprehend these things.

Mathematics isnt independent, we discovered math but we did not create it. We noticed that things have numbers and numbers can define everything. Mathematics is a reasoning tool that works under specific rules. Not in its own human mind that is not perfect like God, but is a useful in calculating values.
