Directions: Identify the pectin content of fruits based on the condition given below. Write rich in pectin,
moderate pectin, little pectin on the REMARKS column.

Condition
1. gel sets in after boiling with sugar
2. juice runs down into the tube very slowly
3. a transparent jelly-like lump is formed
4. the juice is cloudy
5. a jelly-like clot is not very firm
6. the juice is thicker
7. the juice runs below % mark of the gel meter after
one minute
8. over ripe fruits.
9. the clot could be broken into numerous small
pieces
10. the clot could be broken into 2 or more lumps​
