When I was still still a kid, parents are always buying different kinds of bread for our breakfast since we love bread. All of those breads are delicious but my personal favorites are Ensaymada, Spanish Bread, and the famous Egg Pie.
Ensaymada – Is coiled buttery bread with sugar and cheese sprinkles is the Filipinos take on brioche. Like pan desal this bread originated from ensaimada, a yeast bun made in Majorca, Spain with pork lard. The dough is made from bread flour, water, sugar, eggs, and a starter dough. On the surface, its festive appearance (coil shape), luxurious topping of butter, sugar, and cheese, and rich flavor easily makes it popular among Filipinos
Spanish Bread – They are fat rolls of bread dusted with breadcrumbs all over. The texture from the breadcrumbs makes them a delight to eat. The chunky filling that is sweet and buttery is a nice contrast to the soft bread surrounding it. The sweet and buttery filling in this Spanish bread recipe is made of a delicious combination of sugar, breadcrumbs, and margarine. Some versions of this recipe use water or milk, flour, sugar, butter, breadcrumbs, and a little salt.
Egg Pie – Very popular Panaderia Favourite made out of egg custard baked on top of pastry dough, nearly similar to the Portuguese egg tarts, so what’s the difference? First is that the size is bigger usually served in slices and another one is the brown topping you see in the photo. That topping is also made out of eggs but only egg whites, I guess it was a slight variation which gives the dish an even colour on top unlike the spotted dark spots you see in egg tarts.
