How Balut is Made

In Pateros, Metro Manila, there exist an important and interesting industry called
balut-making. Balut is made from eggs laid by ducks that feed on shells or seafoods.
Only the eggs that have not been cracked in the shell or have not been wet by water or
rain can be made into balut. To be sure that ducks’ eggs turn into balut, they undergo a
process called candling. In candling, the eggs are put inside the box with a lighted bulb.
Through a hole on the side of the box a worker turns each egg on all its sides to check
through its shell whether the germ inside is still alive. It is a thing that becomes a duckling.
The good eggs are placed in deep baskets filled with rice chaff that has been
toasted in a big pan. They are stored for 18 days and have now turned into balut. It
means the little germ inside the shell has developed well. It has no wings no feathers, nor
hard bones, yet. The eggs are then taken out from the baskets to prevent getting hatched,
because the rice chaff in the basket gives off heat enough for the eggs to grow.
However, there is an electric machine that helps make balut-making easier, known as an
incubator. It is used in some places. But some say that the state of the balut is not as
good as those made of baskets. Balut is good for one’s health because of its very rich
nutrients. It is also a source of income for many families in the country
