In a large pot, heat the first tablespoon of oil. The Dutch oven was mine. Sear the chicken thighs on all sides while placing the skin-side down. Add the garlic, oyster sauce, and soy sauce once the chicken has finished searing. Coat the chicken with the mixture. Add the peppercorns, bay leaves, brown sugar, vinegar, and vinegar. The liquid should be heated to a boil and then simmered. For one hour, simmer over low heat. Every 20 minutes, turn the chicken over to ensure that all of the sides are evenly colored. On a bed of rice, serve chicken. Personally, I enjoy eating this with vegetables that have been pickled. Although I don't think this is very conventional, it's still wonderful!
