chives, finely cut from a tiny bunch
basil leaves, cut in a tiny handful
To make the salad
Rocket in a 110g bag
12 avocado, peeled, stoned, and sliced
pieces of lobster meat leftover
12 lemon juice
2 tbsp olive oil (extra virgin)
Method
STEP ONE
Warm the lemon juice in a small pot to make the sauce. Add the butter a few cubes at a time, swirling them into the lemon juice to melt them, then adding a few more until all of the butter is used. Remove the sauce from the heat, season with salt and pepper, and keep warm.
STEP TWO
Toss the rocket, avocado, and lobster meat together gently to produce the salad. Toss again with the lemon juice and olive oil until everything is well combined and coated.
3rd STEP
Stir the herbs into the sauce and spoon into a ramekin or small bowl to serve. Arrange the large chunks of lobster meat on a platter with the sauce.
