Learning Task 4: Identify if the given statement is TRUE or FALSE according to the guidelines of preparing raw materials for salting, curing and smoking.

1. Raw materials like meat, fish, egg, poultry and other marine products must be fresh.

2. Fresh eggs have rough, white shells and do not have any undesirable odor.

3. Quality of fish is classified as to fresh, stale or spoiled or damaged.

4. When you buy meat, it is a must that you check for the inspection stamp.

5. “Poultry" can be defined as domestic fowls, including chickens, turkeys, geese and ducks, raised for the production of meat or eggs and the word is also used for the flesh of these birds used as food.​
