Fruits, vegetables and root crops contain 75 to 95% of water. 2. All fruits, vegetables and root crops are non-living biological organisms, having a respiratory system, similar to that of humans. 3. Curing is accomplished by holding the produce at high temperature and high relative humidity for several days. 5.
