When the smell of the incense stickreaches our nose, then the olfactory receptors present in our nose detect it send this information to the fore brain in the form of electrical signals. Fore brain interprets this information as thesmell of incense stick where it is already stored

The forebrain (thinking part of our brain) has separate areas specialized for hearing, smelling, sight, touch, etc and also has regions that collect information or impulses from the various receptors.
Our forebrain detects the smell of an incense stick when it reaches us. Then the forebrain interprets it by putting it together with the information received from other receptors and also with the information already stored in the brain.
