Unripe - when you eat mango unripe, it will give a sour taste but there is a different kind that is not sour when unripe, it is better with sauce when eating unripe mango.
Ripe - ripe mango is the ultimate favorite of Filipinos, its sweet and sour taste combination is really delicious.
Almost ripe - Almost ripe is rarely eaten by people, due to its soft texture and unique strong smell and sourness that most people don’t like. But with common mangoes, ripe is the best time to eat it. Only Indian Mango is very different when it comes to ripening.

" Here in Philippines you can see different kinds of mangoes, including unripe, and ripe mangoes. As you can see, ripe mangoes are the famous one than the unripe ones. The unripe mango differ from a ripe mango because of it's taste and texture. Unripe mango has a sour taste, many filipinos said that, it's much better if you dip the unripe mango in a sauce ( bagoong or asin ). On the other hand, ripe mangoes has sweet and soury taste, many filipinos really like eating ripe mangoes than the unripe mangoes, and it's because of the perfect combination of soury-sweet taste. And of course you should try them both ( the mangoes ). "
